This one is for my chicken and vegetable lovers. Even if you prefer one over the other, such as for my non chicken eaters. Its a quick sub out if that's to your liking. Just the veggies alone bring a savory taste that will fill and happify the rest of ANYONES day!
This recipe was inspired for my step dad whose not a big fan of dark meat. So, today we will be cooking up a chicken breast that will help be completed with light and fluffy rice.
Let's Start Makin'
Ingredients
WINCO
Olive oil
Bouillon
Turmeric
Cayenne
Chicken Breast
1 Carrot sliced
5g Garlic minced
2 tsp Oyster Sauce
1 Yellow Onion diced
225g Mushroom sliced
1 Stock Baby Bok Choy sliced

2 Cups of 3 Sisters

Prep
1. Dice all vegetables and season them in a bowl with a teaspoon of Cajun seasoning. We don't need much because we will make a stew with this later.
Making Chicken
2. Grabbing another bowl, add the chicken breast and mix with:
Place into the air fryer and cook for 10 minutes (I chose the bake option on mine). Flip and cook for a further 5-7 minutes.
Stew
3. Add tsp of olive oil in a non stick pan then cook the rest of your garlic till aroma deepens and its slightly golden. Toss in your carrots, mushrooms and bok choy. Allow the vegetables to stir fry for 2-3 minutes.
Sealing it off with a cup of water, add 2 tsp of bouillon and paprika and mix thoroughly. Put on the lid at simmer for 12-14 minutes.
Plate
4. Add some rice to a bowl and place some of the stew atop. Open up the ninja and throw on some of the chicken you baked.
