Fufu is a soft and cassava or plantain based food eaten throughout West African with a variety of soups and stews.
You can make this from scratch using plantain or cassava. Which also doesn't require to many steps when done correctly. Still, often times, using a fufu mix with the ingredients pre made also makes this delicious West African staple.
This recipe calls for serving size of 5-6 people and can be simply made in a microwave of stove top.

Prep
1. In a large bowl, add 3 cups of fufu mix and 6 cups of water
For each cup of fufu mix we add 2 cups of water. Stir and combine the water and fufu powder together, till there are no lumps.
Cook
2. Using a regular conventional microwave, cover but don't seal the bowl with a top or a damp paper towel. Then, heat the fufu for 4 minutes.
When time is done, take a sturdy spoon and knead the fufu to combine and make sure it is cooking throughout.
3. Add in a cup of water and mix to combine. Heat again for 4 minutes. This time take out at the 2 minute mark and stir before finishing up the remaining time.
Sometimes when cooked at a high heat it dries the water too fast before able to be thoroughly cooked.
So, I add in more water to allow the fufu to be the bouncy and soft texture it is. The more fufu you have, the longer it takes to cook.
Note: At this point the fufu should be turning from the pigmented white/tan color to a more yellow and transparent shade! If not, add 1/2 water and continue heating for 2 minutes until yellow color is gained to know it is cooked.
