Don't you just love a good fried egg topped onto your favorite savory meal? Well, this recipe is the right one for you then. Whip up some pink colorful salmon that is as delicious as it is vibrant!
Including veggies like broccoli and spinach. This clean and tasty meal gave me a little dance in the kitchen.
To air fry I use a Ninja AG301 Foodi 5-in-1. You can also top some beautiful yellow sesame seeds for a unique touch.
Ingredients
WINCO
Cumin
Honey
Bouillon
Cayenne
1 Cup water
1/2 Tsp Honey
1 Cup Broccoli
1/2 Tsp Olive oil
1 Avocado sliced
1/2 Inch Salmon
Spinach chopped
1/2 Tbs Garlic minced

2 Cups of 3 Sisters
Jasmine rice
Make salmon
2. Preheat air fryer (or oven) to 390° add the 1-1/2-inch fillets and line with foil. In a medium bowl whisk together:
Add Broccoli and coat in sauce with an optional 2 tsp Olive oil for flavor and crispness
3. Add salmon and gently toss in seasoning to combine. Place in prepared air fryer and cook for 6 minutes then flip the fillet. Add sauce from bottom of pan on top of fish. Cooking it again for 6 minutes till fork-tender and reaches internal temp of 145°F.
There should be a small sauce created with salmon after cooking. If not, you can mix together the same seasonings in a small pot with and two cup of water and 4g of corn starch for thickness.
Boil for 5-8 minutes.
4. Wash peel of avocado and cut in half. With a spoon take the avocado out and place onto cutting board. Cut into 2 inch thick slices. After, wash handful of spinach and dry with strainer. Chop into into small sizeable pieces for garnish.
5. Bring ingredients together by plating rice in a medium size bowl. Add salmon, spinach, broccoli, avocado and sauce on top of rice.
